Sencha

Sencha is the most common type of Japanese green tea, produced by steaming freshly picked tea leaves to halt oxidation, then rolling and drying them. It yields a bright green liquor with fresh, grassy, vegetal notes and a pronounced umami sweetness, the intensity of which varies by cultivar, harvest time, and processing. Higher-grade sencha (e.g., shincha from the first flush) is tender and aromatic, while lower grades may be more astringent and suited for everyday drinking or iced tea. Brewing typically uses water around 60–80°C for short infusions (about 30 seconds–2 minutes) to balance sweetness and astringency; multiple steeps are common. Sencha contrasts with shaded teas like gyokuro (richer umami) and with powdered matcha (whole-leaf consumption); it plays a central role in Japanese daily life and tea culture.
